Two select parcels of Gin Gin clone Chardonnay from the Wilyabrup and Karridale sub-regions were hand harvested and whole bunch basket pressed directly to barrel for wild fermentation with no additions, adjustments or fining. The wine was aged for 10 months in subtle French oak barrels, 22% of which were new, before bottling unfined, unfiltered and unadulterated.
An elegant, dry Chardonnay with crisp, mineral acidity and great complexity. This wine is bottled unfined and unfiltered and a harmless sediment may remain.
