This special wine is a barrel selection of the best batches of Cabernet from the cooler 2019 vintage. All parcels were hand harvested and fermented with wild vineyard yeasts, hand plunged and gently basket pressed. The wine was aged for 21 months in subtle French oak barriques of which 33% were new and was bottled unfined, unfiltered and unadulterated. The wine was then left to mature for a further year in bottle prior to release. Elegant, structured and with great complexity, this wine defines the greatness of Cabernet Sauvignon and the Margaret River region. Whilst drinking well upon release it will reward cellaring for 20+ years.
