Three stunning of Chardonnay were hand harvested from the Wilyabrup and Karridale sub-regions. Following whole bunch basket pressing directly to barrel, wild fermentation ensued with wild malolactic fermentation and batonnage also occurring to build complexity. The wine was aged for 8 months in French oak barriques, 13% of which were new.
An elegant Chardonnay resulted showing defined fruit profile, crisp, mineral acidity, great complexity and length. This wine is bottled unfined and unfiltered and a harmless sediment may remain.
