2021 Chardonnay

Three parcels of Chardonnay were hand harvested from the Wilyabrup and Karridale sub-regions for this wine. Each parcel was seperatley whole bunch basket pressed directly to barrel, wild fermentation with indigenous yeast, underwent wild malolactic fermentation and batonnage to build complexity. The wine was aged for 9 months in French oak barrels, 13% of which were new. And elegant Chardonnay resulted with defined fruit profile, crisp, mineral acidity, great complexity and length. This wine is bottled unfined and unfiltered and a harmless sediment may remain.
